Ingredients

10 servings
Maida (all-purpose flour, plain flour)4 cups
Dry white wine⅔ cup
Olive oil½ cup
Fennel seeds2 tsp
Salt1½ tsp

Method

4 steps
  1. 1Mix flour, wine, oil, fennel and salt into a firm, smooth dough.
  2. 2Roll thin ropes, cut 10 cm pieces and close into rings.
  3. 3Boil in batches until they float, then drain on a cloth.
  4. 4Bake at 190C for 30 minutes until golden and dry.
Serve it like this

Pile in a bowl and serve with olives, cheese and drinks. They keep crisp in a jar for weeks.
