Sesame seeds6 tbsp, divided
Milk2½ cups
Cornflour (cornstarch)3 tbsp
Fresh cream (thickened cream, heavy cream)¾ cup
Jaggery⅔ cup, grated
Water2 tbsp, warm
Salta pinch
Cardamom¼ tsp
Sugar3 tbsp, for the brittle

Method

  1. 1Toast the sesame seeds in a dry pan on low heat for 4 minutes. Grind 40 g to a smooth paste.
  2. 2Whisk the cornflour into 100 ml of the cold milk. Heat the rest of the milk and cream on medium until steaming, whisk in the slurry and cook 3 minutes.
  3. 3Off the heat, whisk in the sesame paste, salt and cardamom. Cool 20 minutes until just warm.
  4. 4Melt the jaggery in the warm water and stir into the base. Pour into a tub and freeze. Whisk well every 45 minutes, three times, then freeze 4 hours more.
  5. 5For the brittle, melt the sugar on medium heat until amber, stir in the remaining 20 g sesame and spread thin on parchment. Cool and break.
Serve it like this

Shape two quenelles in a chilled bowl. Stick a tall brittle shard between them and drizzle with warm jaggery syrup.
