Ingredients

8 servings
Ladyfingers (sponge finger biscuits, sponge fingers)about 24 savoiardi
Mascarpone500 g, at room temperature
Egg yolk4 yolks
Egg white3 whites
Sugar½ cup
Filter coffee powderstrong espresso or 2 tbsp instant coffee
Water1¼ cups, for the coffee, cooled
Cocoa powder (unsweetened cocoa powder)2 tbsp, for dusting

Method

  1. 1Make strong coffee and let it cool completely.
  2. 2Whisk yolks with half the sugar over a pan of barely simmering water until thick, pale and hot to the touch. Cool, then beat in mascarpone.
  3. 3Whip whites with the rest of the sugar to soft peaks and fold into the mascarpone.
  4. 4Dip each ladyfinger in coffee for 1 to 2 seconds and lay in a dish. Spread half the cream. Repeat.
  5. 5Chill at least 6 hours, ideally overnight. Dust thickly with cocoa before serving.
Serve it like this

Cut neat squares with a hot knife and lift onto cold plates, with a fresh dusting of cocoa. Serve chilled.
