Classic tori ki sabzi.

Ingredients

4 servings
Ridge gourd (chinese okra, angled loofah)3 medium, peeled and cubed
Cooking oil (vegetable oil)1 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Onion1 small, chopped
Tomato1 large, chopped
Green chilli1
Ginger1.5 cm, grated
Turmeric (ground turmeric)¼ tsp
Coriander powder (ground coriander)1½ tsp
Red chilli powder (indian red chili powder)½ tsp
Saltto taste
Coriander leaves (cilantro)chopped

Method

4 steps
  1. 1Heat oil, crackle cumin and asafoetida, then fry onion, ginger and green chilli until soft.
  2. 2Add tomato and powders and cook until soft.
  3. 3Add the ridge gourd and salt. Cover and cook on low until soft, with no water added.
  4. 4Cook uncovered 2 minutes to thicken and finish with coriander.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
