Ingredients

5 servings
Burdock root1 long root, scraped, matchsticks
Vinegar2 tsp
Cooking oil (vegetable oil)1 tbsp
Water1 cup
Soy sauce2½ tbsp
Sugar1 tbsp
Honey1 tbsp (or rice syrup)
Sesame oil1 tsp
Sesame seeds1½ tsp

Method

4 steps
  1. 1Scrape the skin off the burdock and cut into matchsticks; soak in water with vinegar for 10 minutes.
  2. 2Drain and stir fry in oil for 3 minutes.
  3. 3Add water, soy and sugar and simmer 15 minutes.
  4. 4Add honey and reduce until glossy, then finish with sesame oil and seeds.
Serve it like this

Serve in a small heap at room temperature with sesame seeds, or use as a gimbap filling.
