Ingredients

8 servings
Maida (all-purpose flour, plain flour)2 cups
Salta pinch
Cinnamon powder½ tsp
Sesame oil3 tbsp
Gingera thumb, grated and squeezed
Honey6 tbsp, half for dough, half for syrup
Waterfor juice and syrup
Cooking oil (vegetable oil)for deep frying, about 50 g absorbed
Sugar⅓ cup, for syrup
Pine nutsto garnish

Method

6 steps
  1. 1Rub the sesame oil into the flour, salt and cinnamon with your fingertips, then sieve.
  2. 2Mix half the honey with the ginger juice and 2 tbsp water. Fold into the flour, pressing and folding a few times; do not knead.
  3. 3Press into a 1 cm sheet and cut into squares or press into flower moulds. Prick each with a skewer.
  4. 4Fry in oil at about 110 C for 10 minutes until they float and puff, then raise to 140 C and fry until deep amber.
  5. 5Simmer the sugar, the rest of the water and honey with a slice of ginger to a light syrup. Drain the cookies and soak in warm syrup for 6 hours.
  6. 6Lift out, drain and top with pine nuts.
Serve it like this

Arrange on a lacquer tray or plate with pine nuts on top. Serve with green tea or sujeonggwa.
