Classic aate ka halwa, the kada prasad way.

Ingredients

6 servings
Whole wheat flour (wholemeal atta flour, chapati flour)1 cup
Ghee½ cup plus 1 tbsp
Sugar¾ cup
Water2 cups
Cardamoma pinch, optional
Almondsa few, slivered

Method

4 steps
  1. 1Bring the water and sugar to a boil and keep it hot on a back burner.
  2. 2Melt the ghee in a heavy kadai and roast the atta on low heat, stirring constantly.
  3. 3Pour in the hot syrup in a slow stream, stirring hard. Stand back, it splutters.
  4. 4Cook on low, stirring, until the halwa leaves the sides and ghee shines through. Add cardamom and almonds.
Serve it like this

Serve in small bowls, warm or chilled as it likes best, with a few chopped nuts on top.
