Ingredients

Paneer400 g, cut into thin strips
Hung curd (greek yogurt)¼ cup
Panch phoron1 tbsp, coarsely crushed
Kashmiri chilli powder1½ tsp
Turmeric (ground turmeric)¼ tsp
Salt1 tsp
Mustard oil2 tbsp
Onion2 large, thinly sliced
Capsicum (green capsicum, green bell pepper)1 large, sliced
Red bell pepper (red capsicum, red pepper)1, sliced
Vinegar2 tsp
Dry mango powder1 tsp
Provolone8 slices
Baguette (french bread roll)2 baguettes, each cut in half

Method

6 steps
  1. 1Mix the hung curd with half the panch phoron, the chilli, turmeric and half the salt. Toss the paneer in it and rest 10 minutes.
  2. 2Heat the mustard oil in a wide pan on high heat until it just smokes, then lower to medium. Crackle the rest of the panch phoron for 10 seconds.
  3. 3Add the onion and peppers and cook 6 minutes on medium high heat, tossing.
  4. 4Push the vegetables aside, add the paneer and cook on high heat 4 minutes, turning, until browned. Toss together with the vinegar, amchur and remaining salt.
  5. 5Divide into 4 piles in the pan, lay 2 provolone slices on each, cover and leave 1 minute. Warm the rolls in the oven at 180°C for 4 minutes.
  6. 6Split the rolls and scoop a cheesy pile into each.
Serve it like this

Wrap the bottom of the roll in paper and stand it on a board, filling and cheese spilling, with a small pile of pickled chillies and a lemon wedge.
