Ingredients

4 servings
Minced mutton (goat mince, ground goat)600 g lamb mince with some fat
Red bell pepper (red capsicum, red pepper)½, very finely chopped
Kashmiri chilli powder2 tsp, or pul biber
Saltto taste
Onion1, thinly sliced
Sumac1½ tsp
Flat leaf parsleya handful
Tomato2, for grilling
Green chilli3 long chillies
Pita breadlavash or thin flatbread

Method

4 steps
  1. 1Knead the mince with very finely chopped red pepper, chilli and salt for 5 minutes.
  2. 2Chill 30 minutes, then press around wide flat skewers into long kebabs, pinching ridges with your fingers.
  3. 3Grill over very high heat with the tomatoes and chillies, turning, until charred and cooked through.
  4. 4Toss the onion with sumac and parsley. Slide the kebabs onto flatbread with the grilled vegetables.
Serve it like this

Lay kebabs on flatbread with grilled tomato and chilli, sumac onions alongside. Serve with ayran and ezme.
