Ingredients

3 servings
Cauliflower1 small head, florets
Cornflour (cornstarch)¼ cup
Maida (all-purpose flour, plain flour)2 tbsp
Kashmiri chilli powder1 tsp
Ginger garlic paste2 tsp
Soy sauce2 tbsp
Saltto taste
Cooking oil (vegetable oil)4 tsp
Garlic5 cloves, chopped
Ginger2.5 cm, chopped
Green chilli2, slit
Onion½, in petals
Capsicum (green capsicum, green bell pepper)½, cubed
Vinegar2 tsp
Tomato ketchup (ketchup)2 tbsp
Black peppera pinch
Water½ cup
Spring onion (green onion, scallion)2, sliced

Method

6 steps
  1. 1Blanch the florets in hot salted water for 2 minutes. Drain and pat completely dry.
  2. 2Toss with 30 g cornflour, maida, chilli powder, ginger garlic paste, 1 tbsp soy sauce and salt. Sprinkle water until each floret has a thin coat.
  3. 3Brush or spray with 2 tsp oil. Air fry at 190 C, shaking halfway.
  4. 4Heat the remaining oil on high. Add garlic, ginger and green chilli, then onion and capsicum.
  5. 5Add the rest of the soy sauce, vinegar, ketchup and pepper. Mix the remaining cornflour with the water and add.
  6. 6Toss in the gobi just before serving. Top with spring onion.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
