Red bell pepper (red capsicum, red pepper)1.5 kg red peppers
Brinjal (eggplant, aubergine)1 large aubergine
Garlic4 cloves
Cooking oil (vegetable oil)½ cup sunflower oil
Vinegar2 tbsp
Sugar2 tsp
Saltto taste

Method

4 steps
  1. 1Roast peppers and aubergine over a flame or under a grill until blackened.
  2. 2Steam in a covered bowl, then peel and remove seeds.
  3. 3Chop finely or mince, then simmer with oil, garlic, vinegar, sugar and salt, stirring, until thick.
  4. 4Jar while hot or cool and refrigerate.
Serve it like this
