Whole urad (whole black gram)1 cup, soaked 6 hours
Onion1 medium, finely chopped
Tomato2 small, chopped
Garlic8 cloves, crushed
Ginger2.5 cm, grated
Green chilli1, chopped
Whole spices2 cloves, 1 small cinnamon stick
Cumin seeds1 tsp
Asafoetidaa pinch
Turmeric (ground turmeric)½ tsp
Red chilli powder (indian red chili powder)1¼ tsp
Coriander powder (ground coriander)1¼ tsp
Garam masala½ tsp
Cooking oil (vegetable oil)1 tbsp
Ghee1 tbsp
Coriander leaves (cilantro)a handful

- 1Pressure cook the soaked urad with 3 cups water, turmeric and salt for 5 to 6 whistles. Let pressure release naturally.
- 2Heat oil and ghee, crackle cumin and whole spices, add asafoetida, garlic, ginger and chilli and fry until fragrant.
- 3Add onion and cook until golden, then tomatoes and the spice powders until oil separates.
- 4Add the urad with its liquid, mash a few beans and simmer 10 minutes, stirring often.
- 5Finish with garam masala and coriander. Serve hot.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
