Ingredients

6 servings
Potato1 kg floury potatoes
Garlic2 cloves
Butter5½ tbsp
Crème fraîche⅔ cup
Mozzarellatomme fraîche, or mozzarella
Cheddar cheeseyoung Cantal or mild cheddar
Saltto taste
White peppera pinch

Method

5 steps
  1. 1Boil the potatoes with the garlic until very tender.
  2. 2Drain and rice or mash with the garlic until completely smooth.
  3. 3Return to low heat and beat in the butter and crème fraîche.
  4. 4Add the cheese a handful at a time, beating hard in a figure eight with a wooden spoon.
  5. 5Serve immediately, lifting it high from the pan.
Serve it like this
