Ingredients

Raw mango (green mango)2 large green mangoes, peeled and sliced
Salt2 tbsp
Turmeric (ground turmeric)2 tsp
Fenugreek seeds2 tsp, ground
Mustard seeds1 tsp, ground
Red chilli powder (indian red chili powder)2 tsp
Garlic3 cloves
Cooking oil (vegetable oil)2 tbsp
Vinegar2 tbsp
Sugar1½ tbsp
Water⅔ cup

Method

4 steps
  1. 1Toss the mango with salt and turmeric, pack into a clean jar and leave in a warm spot for 1 to 3 days, shaking daily.
  2. 2Warm the oil and fry garlic, fenugreek, mustard and chilli for a minute.
  3. 3Add the mango with its juices, water, vinegar and sugar and simmer until very soft.
  4. 4Blend to a smooth, pourable sauce. Cool and store in the fridge.
Serve it like this

Serve in a small bowl with a spoon, or drizzle in thin lines over sabich, falafel and shawarma.
