Ingredients

4 servings
Attiéké600 g attiéké (frozen or dried, steamed)
Fish2 whole tilapia or sea bream, cleaned and scored
Onion1 large, finely chopped
Tomato2, diced
Cucumber1, diced
Scotch bonnet chilli (habanero or scotch bonnet pepper, habanero chilli)1, minced
Lemon juice2 tbsp
Cooking oil (vegetable oil)3 tbsp
Garlic3 cloves
Gingerthumb
Stock cube (bouillon cube)½ cube
Saltto taste

Method

4 steps
  1. 1Pound garlic, ginger, half the pepper, stock cube and salt into a paste, rub into the fish and rest 20 minutes.
  2. 2Brush with oil and grill over charcoal or in a hot grill pan until charred and flaking.
  3. 3Mix onion, tomato, cucumber, the rest of the pepper, lemon, oil and salt into a salsa.
  4. 4Steam the attiéké until hot and fluffy, then fluff with a fork.
Serve it like this

Mound attiéké on a plate, lay the whole fish beside it and spoon salsa over both. Add a few slices of fried plantain.
