Chicken, curry cut (bone in chicken, small pieces)1 kg bone in pieces
Shallots10, divided
Garlic10 cloves, divided
Turmeric (ground turmeric)1 tsp
Coriander seeds1½ tsp
Candlenuts3
Galangala thumb
Lemongrass2 stalks
Bay leaf (indian bay leaf)salam or bay
Salt1½ tsp
Water2½ cups
Cooking oil (vegetable oil)for frying, about 50 g absorbed
Fresh red chillies (fresh red chiles)8 to 10, for sambal
Tomato1
Shrimp paste1½ tsp
Palm sugar (gula melaka)2 tsp
Lemonlime juice
Tempehsliced
Firm tofufirm, sliced
Cucumbersliced
Cabbagewedges
Cooked rice4 plates

Method

6 steps
  1. 1Blend half the shallots and garlic with turmeric, coriander and candlenuts.
  2. 2Simmer the chicken with the paste, galangal, lemongrass, salam, salt and water for 30 minutes until the liquid is almost gone.
  3. 3Fry the chicken, tempeh and tofu in hot oil until golden and crisp.
  4. 4For sambal, fry the chillies, the rest of the shallots and garlic and the tomato, then pound with shrimp paste, palm sugar, salt and lime.
  5. 5Put a piece of chicken on the sambal in a stone mortar and smash it with the pestle.
  6. 6Serve with rice, tofu, tempeh, cucumber and cabbage.
Serve it like this

Serve in the stone mortar or on a plate with the sambal underneath, rice, tofu, tempeh and raw vegetables around. Iced tea alongside.
