Bajra (pearl millet)¾ cup whole
Moong dal (split yellow mung beans)⅓ cup, yellow
Water4½ cups
Turmeric (ground turmeric)¼ tsp
Ghee2 tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Ginger2.5 cm, grated
Green chilli1, chopped

- 1Soak the bajra overnight. Drain, then pulse it a few times in a mixer or pound it lightly.
- 2Wash the moong dal. Pressure cook the bajra and dal with water, turmeric and salt.
- 3Open and stir hard with a ladle to mash it together.
- 4Heat ghee, add cumin, asafoetida, ginger and green chilli.
- 5Pour the tadka over the khichdi, stir and simmer 2 minutes.
- 6Serve hot, with extra ghee and jaggery or with curd and pickle.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
