Potato500 g baby potatoes, boiled and peeled
Cooking oil (vegetable oil)2 tbsp, for frying
Ghee1½ tbsp
Cumin seeds1 tsp
Asafoetidaa pinch
Whole spicesbay leaf, cardamom, cloves
Tomato4 medium, pureed
Cashews3 tbsp, soaked
Ginger2.5 cm, ground
Green chilli1
Kashmiri chilli powder1¼ tsp
Coriander powder (ground coriander)2 tsp
Garam masala½ tsp
Curd (plain yogurt, natural yoghurt)¼ cup, whisked
Sugar1 tsp

- 1Prick the boiled baby potatoes with a fork and shallow fry until golden.
- 2Heat ghee, add cumin, asafoetida and whole spices, then ginger and green chilli.
- 3Add tomato puree, cashew paste and powders. Cook until ghee separates. Lower heat, stir in curd.
- 4Add the potatoes, sugar, salt and a splash of water. Cover and cook on very low heat for 10 minutes. Finish with garam masala and coriander.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
