Beef350 g, thinly sliced across the grain
Soy sauce1 tbsp, divided
Cornflour (cornstarch)2 tbsp, divided
Baking soda (bicarb soda, bicarbonate of soda)a pinch
Cooking oil (vegetable oil)2 tbsp
Broccoli1 head, in florets
Garlic3 cloves, minced
Ginger1 tsp, minced
Oyster sauce2 tbsp
Dark soy sauce1 tsp
Sugar1½ tsp
Sesame oil1 tsp
Water⅓ cupMethod
- 1Toss beef with 1 tsp soy, 1 tbsp cornflour, baking soda and a teaspoon of oil. Rest 15 minutes.
- 2Mix oyster sauce, remaining soy, dark soy, sugar, sesame oil, water and the rest of the cornflour.
- 3Blanch the broccoli for 1 minute and drain.
- 4Sear the beef in hot oil in one layer, then flip briefly. Remove.
- 5Fry garlic and ginger, add broccoli and sauce, bubble until glossy, return beef and toss.
Serve it like thisServe on a warm plate with the broccoli tumbling through the beef and the sauce spooned over. Steamed rice on the side.
