Classic Belgaum kunda.

Ingredients

8 servings
Milk7½ cups, full cream
Curd (plain yogurt, natural yoghurt)1 tbsp, to grain the milk
Khoa½ cup
Sugar¾ cup
Ghee1 tbsp
Cardamom½ tsp

Method

4 steps
  1. 1Boil milk in a heavy pan and add curd. Simmer, stirring and scraping, until reduced to a third.
  2. 2Caramelise half the sugar in a small pan until amber.
  3. 3Stir the caramel, remaining sugar, khoa and ghee into the milk. Cook until thick and brown.
  4. 4Add cardamom and cool. Serve as soft pieces or spoonfuls.
Serve it like this
