Ingredients

12 servings
Maida (all-purpose flour, plain flour)4 cups
Instant dry yeast2 tsp
Milk1 cup, lukewarm
Sugar60 g in dough, rest for rolling
Egg2
Egg yolk1
Butter4 tbsp, soft
Salt1 tsp
Lemonzest of 1
Cooking oil (vegetable oil)for deep frying, about this much absorbed
Fruit jam (jam or preserves)plum, raspberry or strawberry jam

Method

4 steps
  1. 1Knead flour, yeast, milk, sugar, eggs, yolk, salt and zest, then work in the butter until silky. Rise until doubled.
  2. 2Divide into 12 balls, shape tightly and rise on a floured tray under a cloth.
  3. 3Fry at 170 C, covered for the first side, then uncovered, until deep golden on both sides.
  4. 4Drain, then pipe jam into the side of each one while warm and roll in sugar.
Serve it like this

Pile on a plate dusted with sugar, one torn open to show the jam, with coffee or hot chocolate.
