Chicken, curry cut (bone in chicken, small pieces)750 g

Curd (plain yogurt, natural yoghurt)½ cup
Mint leavesa handful
Coriander leaves (cilantro)a handful
Whole spicescinnamon, cloves, cardamom, bay leaf
Garam masala1½ tsp
Red chilli powder (indian red chili powder)1½ tsp
Turmeric (ground turmeric)¼ tsp
Ghee2 tbsp
Cooking oil (vegetable oil)3½ tbsp
Lemon juice2 tsp

- 1Cook onions in oil until soft and golden, not crisp. Add ginger garlic paste, green chillies and tomatoes and cook to a thick masala.
- 2Add chicken, curd, powders, mint, coriander and salt; cook until tender and thick.
- 3Boil soaked rice in salted water with whole spices until 70 percent done. Drain.
- 4Layer rice over the masala, drizzle ghee and lemon, cover tightly and dum 20 minutes. Mix gently before serving.
Serve it like thisFluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
