Classic Bihari aloo bhujia.

Ingredients

3 servings
Potato3 medium, cut into thin matchsticks
Onion1 medium, sliced
Mustard oil2 tbsp
Nigella seeds½ tsp
Dried red chilli2
Green chilli1, slit
Turmeric (ground turmeric)¼ tsp
Saltto taste

Method

3 steps
  1. 1Soak the potato matchsticks in water for 10 minutes. Drain and pat dry.
  2. 2Heat mustard oil until it smokes and cool slightly. Add nigella and dried chillies, then onion and green chilli.
  3. 3Add potatoes, turmeric and salt. Cook on medium, stirring gently now and then, uncovered, until golden and cooked.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
