Ingredients

4 servings
Whole wheat flour (wholemeal atta flour, chapati flour)2½ cups
Ajwain (carom seeds)1 tsp, divided
Saltto taste, divided
Ghee1 tbsp for the dough, 3 tbsp for dunking
Waterabout 3/4 cup
Sattu1¼ cups
Onion1, finely chopped, divided
Garlic8 cloves, chopped, divided
Ginger2.5 cm, grated
Green chilli4, chopped, divided
Coriander leaves (cilantro)a big handful, divided
Nigella seeds½ tsp
Lemon juice1 tbsp
Mustard oil2½ tbsp, raw, divided
Brinjal (eggplant, aubergine)1 large, for roasting
Tomato3 medium
Potato2, boiled and peeled

Method

7 steps
  1. 1Knead the flour with half the ajwain, a little salt, 1 tbsp ghee and water into a firm dough. Rest 20 minutes.
  2. 2Mix the sattu with half the onion, garlic and green chilli, the ginger, half the coriander, nigella, the rest of the ajwain, salt, lemon juice, 1 1/2 tbsp mustard oil and a splash of water.
  3. 3Divide the dough into 12. Flatten each into a cup, fill with a heaped tablespoon of sattu, pinch shut and roll into a ball.
  4. 4Bake at 200 C for 30 to 35 minutes, turning halfway. An appe pan on low with a lid also works.
  5. 5Meanwhile, roast the brinjal and tomatoes directly over the flame, turning, until charred all over. Peel.
  6. 6Mash the brinjal, tomatoes and potatoes with the remaining onion, garlic, green chilli, coriander, salt and mustard oil.
  7. 7Melt the remaining ghee. Crack each litti, dunk or drizzle with ghee and serve with the chokha.
Serve it like this
