Ingredients

3 servings
Cooked rice4 cups, cooked a day ahead and chilled
Garlic15 cloves, finely chopped
Cooking oil (vegetable oil)2½ tbsp
Spring onion (green onion, scallion)3 stalks, whites and greens separated
Carrot1 small, diced
Green beans6, chopped
Sweet corn kernels (corn kernels)¼ cup
Capsicum (green capsicum, green bell pepper)½, diced
Soy sauce1 tbsp
Vinegar1 tsp
Black pepper¾ tsp
Saltto taste

Method

4 steps
  1. 1Fry half the garlic in the oil on medium low, stirring, until deep golden brown. Lift out and keep aside.
  2. 2In the same garlic oil, on high heat, add the remaining raw garlic and spring onion whites for 30 seconds.
  3. 3Add carrot, beans, corn and capsicum and toss for 2 minutes.
  4. 4Add rice, soy sauce, vinegar, pepper and salt. Toss for 3 minutes. Fold in half the browned garlic and the greens, and scatter the rest on top.
Serve it like this

Fluff gently with a fork and serve hot on a wide plate, with raita or a side next to it.
