Century egg and pork congee.

Ingredients

4 servings
Rice¾ cup
Water8 cups
Pork200 g lean pork, sliced
Century egg2, peeled and diced
Ginger1 thumb, julienned
Salt1½ tsp, plus 1/2 tsp for the pork
White pepper½ tsp
Sesame oil1 tsp
Spring onion (green onion, scallion)2, sliced
Youtiao1 stick, sliced, to serve

Method

4 steps
  1. 1Rub the pork with 1/2 tsp salt and rest 30 minutes or overnight in the fridge.
  2. 2Rinse the rice and bring it to a boil with the water and half the ginger. Simmer gently, stirring often, for 60 to 75 minutes.
  3. 3Add the pork and half the century egg and simmer 8 to 10 minutes until the pork is cooked through.
  4. 4Season with salt, white pepper and sesame oil. Serve topped with the rest of the egg, ginger, spring onion and youtiao.
Serve it like this

Ladle into deep bowls, scatter egg, ginger and spring onion on top, with youtiao on the side for dunking.
