Amaranth leaves1 big bunch, chopped
Fresh grated coconut½ cup
Shallots4
Garlic2 cloves
Green chilli1
Coconut oil2 tsp
Mustard seeds½ tsp
Dried red chilli1
Curry leaves1 sprig
Saltto taste

Method

3 steps
  1. 1Crush coconut, shallots, garlic and green chilli coarsely.
  2. 2Heat coconut oil, splutter mustard, add red chilli and curry leaves, then the leaves and salt.
  3. 3Add the coconut mix, toss until dry.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
