Ingredients

8 servings
Maida (all-purpose flour, plain flour)1¾ cups plain flour
Baking powder1 tbsp
Salt¼ tsp
Butter4 tbsp, cold, cubed
Cheddar cheese1 cup grated, a little kept for tops
Prepared mustard½ tsp
Milk½ cup plus 2 tbsp

Method

4 steps
  1. 1Heat the oven to 220 C. Rub the butter into the flour, baking powder and salt with your fingertips.
  2. 2Stir in most of the cheese, then the mustard and enough milk to make a soft dough.
  3. 3Pat out 2.5 cm thick and cut 8 rounds, pressing straight down without twisting. Brush with milk and top with the remaining cheese.
  4. 4Bake 12 to 15 minutes.
Serve it like this

Split the scones warm and spread with butter, with apple slices on the side.
