Classic chha gosht.

Ingredients

4 servings
Mutton (goat meat)750 g, curry cut
Curd (plain yogurt, natural yoghurt)1 cup
Besan (chickpea flour, gram flour)2½ tbsp
Water2 cups
Mustard oil3 tbsp
Whole spicesblack cardamom, cloves, cinnamon, bay leaf
Onion1 large, chopped
Ginger garlic paste2 tbsp
Turmeric (ground turmeric)¼ tsp
Red chilli powder (indian red chili powder)1 tsp
Coriander powder (ground coriander)2 tsp
Garam masala1 tsp
Saltto taste

Method

4 steps
  1. 1Pressure cook the mutton with half the water, half the ginger garlic paste and salt for 5 whistles. Let pressure release naturally.
  2. 2Whisk curd, besan, turmeric, chilli and the remaining water into a smooth buttermilk.
  3. 3Heat mustard oil until it smokes, cool slightly, add whole spices and onion and fry until golden. Add the remaining ginger garlic paste and coriander powder.
  4. 4Lower heat, pour in the buttermilk, stirring continuously until it boils. Add the mutton with its broth and simmer 15 minutes. Finish with garam masala.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
