Chicken, boneless600 g boneless thighs, in large strips
Buttermilk1¼ cups, divided
Maida (all-purpose flour, plain flour)2 cups, divided
Cornflour (cornstarch)2 tbsp
Kashmiri chilli powder2 tsp, as paprika
Black pepper1 tsp
Salt2 tsp
Cooking oil (vegetable oil)for frying, about 1/3 cup absorbed

Milk¾ cup
Butter3½ tbsp, melted
Sugar1 tbsp
Baking powder2 tsp
Maple syrup¼ cup, to serve
Red chilli sauce1 tbsp, optionalMethod
- 1Soak chicken in half the buttermilk with 1 tsp salt for at least 30 minutes.
- 2Mix 120 g flour, cornflour, paprika, pepper and salt. Dredge chicken and fry at 170 C for 6 to 7 minutes until deep golden and no pink remains.
- 3Whisk remaining flour, sugar, baking powder and a pinch of salt. Add eggs, milk, remaining buttermilk and melted butter; mix until just combined.
- 4Cook in a hot greased waffle iron until steam stops.
- 5Top each waffle with chicken, drizzle maple syrup mixed with a little hot sauce.
