Ingredients

3 servings
Egg noodles220 g egg noodles
Chicken, boneless250 g, thinly sliced
Soy sauce4 tsp, divided
Cornflour (cornstarch)2 tsp
Sesame oil2 tsp, divided
Cooking oil (vegetable oil)2 tbsp
Garlic3 cloves, minced
Ginger1 tsp, minced
Carrot1 small, in matchsticks
Button mushroom100 g, sliced
Bok choy (pak choi)2 heads, sliced
Spring onion (green onion, scallion)3 stalks, in lengths
Oyster sauce1 tbsp plus 1 tsp
Dark soy sauce2 tsp
Sugar1 tsp

Method

5 steps
  1. 1Toss the chicken with 1 tsp soy and the cornflour.
  2. 2Boil the noodles until just tender, drain and toss with half the sesame oil.
  3. 3Stir fry the chicken in hot oil until cooked through with no pink. Push aside and fry garlic and ginger.
  4. 4Add carrot, mushroom and bok choy and toss on high heat for 2 minutes.
  5. 5Add noodles, oyster sauce, soy, dark soy, sugar and remaining sesame oil. Toss well, add spring onion and serve.
Serve it like this
