Chicken pakora, Punjabi style.

Ingredients

4 servings
Chicken, boneless400 g boneless, bite sized
Besan (chickpea flour, gram flour)¾ cup
Rice flour3 tbsp
Ginger garlic paste1 tbsp
Kashmiri chilli powder1½ tsp
Garam masala¾ tsp
Ajwain (carom seeds)½ tsp
Lemon juice2 tsp
Green chilli1, chopped
Coriander leaves (cilantro)2 tbsp
Salt1 tsp
Waterabout 1/4 cup
Cooking oil (vegetable oil)absorbed from deep frying
Chaat masala1 tsp

Method

4 steps
  1. 1Marinate chicken with ginger garlic paste, chilli, garam masala, lemon and salt for 30 minutes.
  2. 2Mix besan, rice flour, ajwain, green chilli and coriander with water into a thick batter. Coat the chicken.
  3. 3Deep fry in medium hot oil for 5 to 6 minutes until golden and no pink remains inside.
  4. 4Sprinkle chaat masala and serve with mint chutney.
Serve it like this

Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
