Ingredients

4 servings
Chicken, curry cut (bone in chicken, small pieces)500 g
Onion1 large, sliced
Tomato2 medium
Ginger garlic paste1½ tbsp
Fresh grated coconut⅓ cup
Cashews6
Fennel seeds1 tsp
Poppy seeds (white poppy seeds)1 tsp
Whole spicescinnamon, cloves, star anise, bay leaf
Red chilli powder (indian red chili powder)1 tbsp
Coriander powder (ground coriander)1 tbsp
Turmeric (ground turmeric)½ tsp
Garam masala1 tsp
Cooking oil (vegetable oil)3 tbsp
Mint leavesa handful
Curry leaves2 sprigs
Water2½ cups
Saltto taste

Method

4 steps
  1. 1Grind coconut, cashews, fennel and poppy seeds to a smooth paste.
  2. 2Heat oil, fry whole spices, curry leaves and onions until golden. Add ginger garlic paste, then tomatoes and mint and cook to a mush.
  3. 3Add the powders and chicken and stir until coated. Add water and salt and pressure cook 2 whistles.
  4. 4Stir in the coconut paste and simmer 8 minutes. It should be thin and pourable.
Serve it like this

Serve hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
