Ingredients

4 servings
Chicken, boneless500 g, minced (thigh is juicier)
Onion1 small, very finely chopped and squeezed
Ginger garlic paste1 tbsp
Green chilli2, minced
Coriander leaves (cilantro)3 tbsp, chopped
Mint leaves2 tbsp, chopped
Garam masala1 tsp
Kashmiri chilli powder1 tsp
Cumin powder (ground cumin)½ tsp
Besan (chickpea flour, gram flour)2 tbsp, roasted
Lemon juice2 tsp
Saltto taste
Butter1 tbsp, melted

Method

4 steps
  1. 1Squeeze the chopped onion dry, then mix everything except butter and knead for 3 minutes.
  2. 2Chill 30 minutes.
  3. 3With wet hands, press portions around skewers into long kebabs.
  4. 4Grill at 230 C or over coals for 10 to 12 minutes, turning and basting, until cooked through.
Serve it like this

Slide off skewers onto a platter with onion rings, lemon and mint chutney. Serve straight off the grill.
