Ingredients

4 servings
Chicken, boneless500 g boneless, small cubes
Onion1 large, diced
Capsicum (green capsicum, green bell pepper)1 green, diced
Red bell pepper (red capsicum, red pepper)½, diced
Tomato1, diced
Garlic3 cloves, minced
Cumin powder (ground cumin)1½ tsp
Coriander powder (ground coriander)1 tsp
Whole spices1 tsp ground cardamom, cinnamon and clove
Turmeric (ground turmeric)¼ tsp
Black pepper½ tsp
Cooking oil (vegetable oil)2 tbsp
Lemon juice1 tbsp
Coriander leaves (cilantro)a handful
Saltto taste

Method

4 steps
  1. 1Mix cumin, coriander, ground whole spices, turmeric and pepper. This is your xawaash.
  2. 2Heat oil on high and brown the chicken cubes with garlic and half the xawaash.
  3. 3Add onion and peppers and toss 3 minutes, then tomato and remaining spice.
  4. 4Cook until chicken is cooked through and no pink remains. Finish with lemon, salt and coriander.
Serve it like this

Pile onto a platter with canjeero or bariis, lemon wedges and a little green chilli sauce on the side.
