Tapioca starch2 cups
Milk½ cup
Water¼ cup
Cooking oil (vegetable oil)¼ cup
Salt1 tsp
Egg2
Parmesan⅔ cup, finely grated
Cheddar cheese¾ cup, grated
Green chilli2, very finely chopped
Coriander leaves (cilantro)a small handful, finely chopped
Kashmiri chilli powdera pinch

Method

6 steps
  1. 1Bring milk, water, oil and salt to a boil on medium heat.
  2. 2Pour over the tapioca starch in a bowl and stir hard until smooth and sticky. Cool 10 minutes.
  3. 3Beat in the eggs one at a time, then the cheeses, chilli, coriander and chilli powder.
  4. 4With oiled hands roll 24 small balls and space them on a lined tray.
  5. 5Bake in the oven at 200°C for 22 minutes.
  6. 6Serve warm.
Serve it like this

Pile the puffs in a small cast iron pan or a napkin lined basket, one torn open to show the stretch. Serve with a cutting chai on the side.
