Chilli momos.

Ingredients
Maida (all-purpose flour, plain flour)1⅔ cups
Cabbage2 cups, very finely chopped
Carrot1 small, grated
Onion1 large, split: half chopped, half in petals
Garlic7 cloves, chopped, split
Ginger2.5 cm, chopped
Spring onion (green onion, scallion)2 stalks, chopped
Soy sauce1½ tbsp, split
Cooking oil (vegetable oil)3 tbsp, split
Capsicum (green capsicum, green bell pepper)1, cubed
Red chilli sauce2 tbsp
Tomato ketchup (ketchup)1 tbsp
Vinegar1½ tsp
Cornflour (cornstarch)1 tbsp

Method
5 steps
1Knead maida, a pinch of salt and about 100 ml water into a firm, smooth dough. Rest 20 minutes covered.
2Mix cabbage, carrot, chopped onion, half the garlic, ginger, spring onion, pepper, salt and 1 tsp soy sauce with 1 tsp oil.
3Roll thin discs, fill and pleat into momos. Steam on an oiled plate for 10 to 12 minutes.
4Pan fry the steamed momos in 1 tbsp oil until golden on the bottom.
5In the remaining oil, fry remaining garlic, onion petals and capsicum. Add chilli sauce, ketchup, remaining soy, vinegar and cornflour in 80 ml water. Toss the momos in until glazed.
Serve it like this
Drain on paper for a minute, pile onto a plate and serve hot with chutney on the side.
