Ingredients

2 servings
Wheat noodles200 g thin alkaline or wheat noodles
Chinese chilli oil2 tbsp with sediment
Sichuan peppercorn½ tsp, ground
Soy sauce1 tbsp plus 1 tsp
Chinkiang black vinegar2 tsp
Garlic2 cloves, crushed with water
Ginger1 tsp, juiced
Chinese sesame paste2 tsp
Peanuts2 tbsp, roasted and crushed
Zha cai2 tbsp, chopped
Spring onion (green onion, scallion)1, sliced
Bok choy (pak choi)2 small heads
Sugara pinch
Waterhot noodle water or stock

Method

4 steps
  1. 1In each bowl put chilli oil, Sichuan pepper, soy, vinegar, garlic water, ginger, sesame paste and sugar.
  2. 2Boil the noodles until just tender, blanching the bok choy in the same water.
  3. 3Add a ladle of hot noodle water or stock to each bowl to loosen the sauce.
  4. 4Add noodles and greens, top with peanuts, zha cai and spring onion. Mix before eating.
Serve it like this

Serve in a deep bowl with the red sauce at the bottom and toppings heaped on, mixed at the table.
