Classic cinnamon coffee cake.

Ingredients

Maida (all-purpose flour, plain flour)2 cups, divided
Sugar¾ cup
Brown sugar½ cup
Butter⅔ cup, divided
Egg2
Curd (plain yogurt, natural yoghurt)¾ cup, thick
Baking powder1¼ tsp
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Cinnamon powder1 tbsp
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Salt¼ tsp

Method

5 steps
  1. 1Make the streusel: rub 60 g butter into 70 g maida, the brown sugar and the cinnamon until clumpy. Chill.
  2. 2Heat the oven to 175 C and grease an 8 inch square tin. Cream the remaining butter with the sugar until fluffy, then beat in the eggs and vanilla.
  3. 3Fold in the remaining maida, baking powder, soda and salt alternately with the curd.
  4. 4Spread half the batter in the tin, scatter a third of the streusel, then the rest of the batter and the remaining streusel on top.
  5. 5Bake 40 to 45 minutes. Cool 20 minutes before cutting.
Serve it like this

Cut into squares and serve slightly warm on a platter, with a pot of coffee or chai and fresh fruit alongside.
