Ingredients

Datespitted, chopped
Water1 cup
Lemon juice2 tsp
Rolled oats (porridge oats)2 cups rolled oats
Maida (all-purpose flour, plain flour)1¼ cups
Brown sugar¾ cup
Butter¾ cup, melted
Baking soda (bicarb soda, bicarbonate of soda)½ tsp
Salta pinch

Method

4 steps
  1. 1Simmer dates and water for 8 to 10 minutes, mashing, until a thick paste. Stir in lemon juice and cool.
  2. 2Mix oats, flour, sugar, soda and salt, then stir in melted butter.
  3. 3Press two thirds into a lined 20 x 20 cm tin, spread the date paste over and scatter the rest of the crumble on top.
  4. 4Bake at 180°C for 30 minutes until golden. Cool before cutting.
Serve it like this

Cut into squares and stack on a plate with tea or coffee. They keep well in a tin for days.
