Ingredients

4 servings
Cooked rice4 cups
Butter3 tbsp, divided
Onion1, chopped
Chicken, boneless200 g, diced
Button mushroomsliced
Tomato ketchup (ketchup)2 tbsp, for the rice
Maida (all-purpose flour, plain flour)3 tbsp
Milk2 cups
Salt1 tsp
Nutmega pinch
Mozzarella1 cup, grated
Parmesan2 tbsp

Method

4 steps
  1. 1Fry the onion and chicken in half the butter until cooked through, add mushrooms, then the rice and ketchup and toss.
  2. 2Melt the remaining butter, stir in flour for 1 minute, then whisk in milk gradually and simmer until thick. Season with salt and nutmeg.
  3. 3Spread the rice in a baking dish, pour the sauce over and top with cheeses.
  4. 4Bake at 220 C for 15 minutes until bubbling and golden.
Serve it like this
