Ingredients

4 servings
Water6 cups
Dried salted fisha handful dried anchovies
Kombu2 pieces
Radish (daikon radish, mooli)a piece, thick slices
Onion1 small, halved
Fish cakes300 g sheets, folded on skewers
Garlic3 cloves, minced
Soy sauce1½ tbsp
Fish sauce2 tsp
Salta pinch
Spring onion (green onion, scallion)2 stalks, chopped
Green chilli1, sliced

Method

4 steps
  1. 1Simmer anchovies, kelp, radish and onion in the water for 15 minutes.
  2. 2Remove anchovies and kelp; slice the kelp into strips to tie on skewers if you like.
  3. 3Fold fish cake sheets in ribbons onto skewers, add to the broth with garlic, soy and fish sauce and simmer 5 minutes.
  4. 4Add spring onion and chilli and serve with broth in cups.
Serve it like this

Serve skewers standing in a pot of broth with paper cups for sipping and soy dipping sauce on the side.
