Ingredients

3 servings
Elephant foot yamabout 3 cups, peeled and cubed
Lemon juice1 tbsp, plus extra for boiling
Ghee1½ tbsp
Cumin seeds1 tsp
Green chilli2, chopped
Peanuts¼ cup, roasted and crushed
Sugar1 tsp
Coriander leaves (cilantro)a handful
Saltrock salt, to taste
Water2 cups, for boiling

Method

4 steps
  1. 1Wear gloves or oil your hands, peel and cube the suran. Pressure cook in water with a squeeze of lemon and salt for 2 whistles.
  2. 2Drain well and let the cubes dry for a few minutes.
  3. 3Heat ghee, crackle cumin, add chilli, then the suran. Toss on medium until lightly golden.
  4. 4Add peanuts, sugar and rock salt, toss, and finish with lemon and coriander.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
