Ingredients

Rajma, dry (dried red kidney beans)1¼ cups dry carioca or rajma beans, soaked
Bacon (streaky rashers, streaky bacon)7 rashers
Smoked sausagelinguiça, sliced
Egg3
Toasted cassava flour1 cup farinha de mandioca
Onion1
Garlic3 cloves
Collard greens (haak)couve, very thinly sliced
Spring onion (green onion, scallion)2
Cooking oil (vegetable oil)2 tsp

Method

4 steps
  1. 1Cook the beans until just tender, then drain.
  2. 2Fry the bacon and sausage until crisp. Scramble the eggs in the fat.
  3. 3Add onion and garlic, then the beans, then stir in the cassava flour.
  4. 4Wilt the collard greens in oil and fold in with spring onion.
Serve it like this
