Ingredients

4 servings
Fish4 fillets, 150 g each (seer or pomfret)
Turmeric (ground turmeric)½ tsp
Kashmiri chilli powder2 tsp, divided
Black pepper½ tsp
Lemon juice1 tbsp
Coconut oil2 tbsp
Shallots12, thinly sliced
Ginger2 cm, julienned
Garlic3 cloves, sliced
Green chilli2, slit
Curry leaves2 sprigs
Tomato1 large, chopped
Thick coconut milk½ cup
Banana leaves1 leaf, cut in 4
Saltto taste

Method

6 steps
  1. 1Rub the fish with the turmeric, half the chilli, pepper, lemon juice and salt. Rest 15 minutes.
  2. 2Heat the coconut oil in a pan on medium heat. Fry the shallots for 8 minutes, then add ginger, garlic, green chilli and curry leaves for 1 minute.
  3. 3Add the tomato and remaining chilli and cook 5 minutes on medium heat. Stir in the coconut milk and cook 2 minutes until thick.
  4. 4Heat the oven to 200°C. Pass each banana leaf piece over a flame for a few seconds to soften, and lay each on a 35 cm square of baking paper.
  5. 5Spoon 1 tbsp masala on each leaf, add a fillet and top with another 1 tbsp masala. Fold the paper into a half moon and crimp the edge tightly.
  6. 6Bake on a tray in the oven at 200°C for 12 to 14 minutes.
Serve it like this

Set the sealed parcel on a warm plate, slit a cross at the table so the steam rises, and fold back the paper to show the leaf. Add a lemon wedge and fried curry leaves.
