Classic French fruit tart, tarte aux fruits.

Ingredients

Maida (all-purpose flour, plain flour)1½ cups
Butter½ cup plus 1 tbsp, cold, divided
Sugar⅔ cup, divided
Egg yolk5
Milk1⅔ cups
Cornflour (cornstarch)¼ cup
Vanilla essence (vanilla flavouring, imitation vanilla extract)1 tsp
Strawberries1 cup, halved
Kiwi fruit2, sliced
Blueberries½ cup
Ripe mango1 small, sliced
Apricot jam (apricot preserves)3 tbsp, for glazing
Salta pinch

Method

5 steps
  1. 1Rub 115 g cold butter into the maida, 30 g sugar and salt. Add one yolk and 1 to 2 tbsp cold water to bring it together. Chill 30 minutes.
  2. 2Roll out, line a 9 inch tart tin, prick, line with paper and baking beans. Bake at 180 C for 15 minutes, then 10 minutes without beans.
  3. 3Heat the milk. Whisk the remaining yolks, 100 g sugar and cornflour, pour in the hot milk, return to the pan and whisk on medium until it boils and thickens.
  4. 4Off the heat, whisk in the remaining butter and vanilla. Cover the surface with cling film and chill.
  5. 5Spread the cold cream into the cold shell and arrange the fruit in circles. Brush with warmed apricot jam.
Serve it like this

Serve chilled slices on flat plates, cut with a sharp knife so the fruit stays in place.
