Horse gram¾ cup, soaked overnight
Water3¼ cups
Turmeric (ground turmeric)¼ tsp
Ghee1½ tbsp
Cumin seeds1 tsp, or jakhiya
Asafoetidaa pinch
Dried red chilli2
Garlic4 cloves
Ginger1.5 cm
Tomato1 medium, chopped
Coriander powder (ground coriander)1½ tsp
Red chilli powder (indian red chili powder)½ tsp
Rice flour1 tbsp, optional, to thicken

- 1Pressure cook the soaked gahat with water, turmeric and salt for 7 to 8 whistles. Let pressure release naturally.
- 2Mash some of the beans. Stir in rice flour mixed with water and simmer 5 minutes.
- 3Heat ghee, add jakhiya or cumin, asafoetida, red chillies, garlic and ginger, then tomato and powders. Cook until soft.
- 4Pour the tadka into the dal, simmer 5 minutes and finish with coriander.
Serve it like thisServe hot in a deep bowl with a swirl of ghee or a few coriander leaves on top, and rice or rotis on the side.
