Classic Punjabi winter pickle.

Ingredients

12 servings
Carrot2, cut into sticks
Cauliflower1 small head, florets
Turnip2, sliced
Mustard oil½ cup
Ginger garlic paste2 tbsp
Jaggery½ cup
Vinegar¼ cup
Mustard seeds2 tbsp, coarsely ground
Red chilli powder (indian red chili powder)1 tbsp
Garam masala2 tsp
Salt2 tbsp

Method

4 steps
  1. 1Blanch the vegetables in boiling water for 1 minute, drain and spread on a cloth to dry in the sun or a dry room for a few hours.
  2. 2Heat mustard oil to smoking, cool slightly and fry the ginger garlic paste until golden.
  3. 3Add the vegetables, mustard, chilli, garam masala and salt. Toss and turn off heat.
  4. 4Melt jaggery with vinegar, pour over and mix. Fill jars and keep in the sun for 4 to 5 days.
Serve it like this

Serve hot on a plate, with a few fresh coriander leaves on top.
