Ingredients

4 servings
Brinjal (eggplant, aubergine)2 long brinjals
Soy sauce1½ tbsp
Garlic2 cloves, minced
Gochugaru1 tsp
Sugar½ tsp
Spring onion (green onion, scallion)1 stalk, chopped
Sesame oil2 tsp
Sesame seeds1 tsp

Method

4 steps
  1. 1Cut the brinjals into finger length pieces, then halve lengthwise.
  2. 2Steam skin side up for 6 to 7 minutes.
  3. 3Cool slightly, then tear into strips with your fingers and squeeze gently.
  4. 4Toss with soy, garlic, gochugaru, sugar, spring onion, sesame oil and seeds.
Serve it like this

Pile the strips in a shallow bowl, scatter spring onion and sesame, and serve at room temperature with rice.
