Ingredients

3 servings
Chicken, boneless500 g boneless thigh, bite sized
Egg1
Soy sauce1½ tbsp, divided
Cornflour (cornstarch)½ cup, divided
Cooking oil (vegetable oil)for frying (about 4 tbsp absorbed)
Dried red chilli6 to 8
Garlic3 cloves, minced
Ginger1 tbsp, minced
Sugar2½ tbsp
Vinegar1½ tbsp rice vinegar
Dark soy sauce1 tsp
Water⅓ cup
Spring onion (green onion, scallion)2 stalks, sliced
Sesame seeds1 tsp

Method

5 steps
  1. 1Coat the chicken with egg, 2 tsp soy and most of the cornflour.
  2. 2Fry in batches until golden, rest, then fry again until deep golden. Cook until no pink remains.
  3. 3Mix the remaining soy, sugar, vinegar, dark soy, a spoon of cornflour and the water.
  4. 4In 1 tbsp oil, fry the chillies, garlic and ginger, then add the sauce and simmer until glossy.
  5. 5Toss in the chicken, coat quickly, and finish with spring onion and sesame. Serve at once.
Serve it like this

Pile onto a warm plate with sesame and spring onion over the top, steamed rice and steamed broccoli alongside. Serve straight away while crisp.
